This coarse and moist salt comes from the salt fields where the Atlantic Ocean meets gray-blue clay and is packed with essential minerals and trace elements, giving it a distinctive light gray color and unmistakable flavor. Our salt-making process begins with the sea water, rich in minerals and trace elements, which is carefully rested in the final salt pan to allow the sun to evaporate the water. As the water evaporates, the precious minerals and trace elements are naturally absorbed into the salt crystals and slowly settle to the bottom. By hand, we scrape off the top layer of salt, which is almost white and has had minimal contact with the clayey subsoil. The salt that remains, with its beautiful gray hue and increased mineral content compared to Fleur de Sel, is carefully harvested by hand. This moist sea salt is then carefully dried for six months to allow it to develop its full flavor profile.
